Ingredients

  • 130ml Easy Eggs Liquid Egg White
  • 1 cup cooked quinoa
  • 1/2 cup diced sweet potatoes
  • 1/4 cup diced zucchini
  • 1/2 cup cherry tomatoes, halved
  • 1 cup mixed greens (arugula or spinach)
  • 1 tbsp olive oil
  • Salt, pepper, and everything bagel seasoning to taste

Instructions

    Cook the base

    Heat olive oil in a non-stick pan over medium heat. Pour in the Liquid Egg White and cook gently, stirring slowly, until just set. Season with salt and pepper.

    Warm the grains

    While the egg white cooks, warm your quinoa or rice in a separate pan or microwave for 60 seconds.

    Build the bowl

    dd the warm grains to your bowl first. Layer the cooked egg white on top, then arrange the spinach, avocado and cherry tomatoes around it.

    Finish and serve

    Drizzle with a little extra olive oil, add chili flakes and serve immediately.
